Salted Caramel Apple Pie Blondies
A chewy blondie that has all the best parts of a sweet caramel apple pie.
I posted my apple pie blondie recipe about a year ago and everyone loved it on TikTok and Instagram. I recently made it again and added a few edits to the recipe so that they are even better. Here’s the updated recipe! It’s a fraction of the time and effort of a traditional apple pie but it’s as tender and sweet as a classic slice.
INGREDIENTS
Blondie:
1 egg
1/3 cup granulated sugar
1/3 cup brown sugar
1/2 cup oil
3/4 cup flour
1/4 tsp baking powder
Chewy caramel candies
Apple filling:
1 tbsp brown sugar
1 apple, diced
1 tsp cinnamon
1 tsp flour

DIRECTIONS
1. Preheat your oven to 375F. Then mix together the egg and sugars. Make sure to whisk them together really well, until the sugar is fully dissolved and the eggs turn a light pale color, about 5 minutes. This will create sort of a meringue that will help form a crackly top on the blondie!
2. Add in the oil and mix again. Any neutral flavored oil will work.
3. Then add the flour and baking powder. Mix until no clump of flour remain.
4. In a separate bowl, mix together your chopped apples along with the sugar, cinnamon, and flour. The flour coating will help prevent the apples from all sinking to the bottom.
5. Cut some caramel candy into small pieces, then add these and the apples into the blondie mixture. I used Hi Soft Salted Caramel Chews, but feel free to use whatever caramel candy that you’d like. Mix again until combined.
6. Pour the blondie mixture into a small grease and lined baking tray. I used a 8”x4” pan. Top with a few extra pieces of caramel candy.
7. Bake 28-30 min or until the top has set and a toothpick inserted in the middle comes out almost clean. The blondies should be set, but do not overbake!
8. Let the blondies cool completely before cutting and serving. Enjoy <3
