S'mores Cookie Bar with Brown Butter
My favorite recipe for easy ooey gooey s'mores bars that are guaranteed to turn out amazing every time.
This is one of my favorite recipes because it’s so easy to make and it turns out amazing Every. Single. Time. The recipe is very forgiving, so even if the measurements aren’t exact, it’ll still turn out amazing. I always go back to this when I’m looking for a comfort bake.
INGREDIENTS
10 graham crackers, crushed into powder
1.5 cups flour
1 tsp bp
2 eggs
1 cup browned butter
1 cup granulated sugar
1/2 cup brown sugar
1 tbsp vanilla
a 10 ounce bag of mini marshmallows
a 12 oz bag semi-sweet chocolate chips
DIRECTIONS
1. In a small pot, add about 1+1/4 cups of butter over medium heat. You’ll need a bit more than a cup of butter to start because 20-30% will evaporate afterward. After about 5 min, it will eventually foam and sizzle, then turn golden brown. You should end up with about 1 cup of browned butter.
2. Let the butter cool a bit, then pour it into a large mixing bowl. Add the eggs, sugar, and vanilla, then mix everything together until well combined and the color turns more pale in color, this will take about 5 minutes if you’re mixing by hand.
3. Then add the flour, crushed graham crackers, and baking powder, and mix everything until well combined.
4. In a 8” x 8” baking tray, spread about 3/4 of the cookie batter into the base of the tray, then pour on the mini marshmallows and chocolate chips on top of the cookie base and spread everything out evenly. Scoop small pieces of the remaining cookie batter and lay them over the top of the marshmallows and chocolate.
5. Bake at 350F for 25-30 min until the marshmallows and cookie turns golden brown. Let the bars cool slightly before cutting and enjoy!
