Spooky Halloween Brownies
These gooey mochi brownies are the perfect spooky treat for Halloween!
I’ve made these gooey mochi brownies almost every year for our Halloween party and they’re always a hit. It’s a classic chewy and dense chocolate brownie filled with a red gooey sweet mochi and make it look so spooky and fun.
Ingredients:
brownie mix
egg
oil
3/4 cup glutinous rice flour
3/4 cup water
1/4 cup sugar
red food coloring
DIRECTIONS:
1. Prepare the brownie batter. I always use my box brownie hack to make the best dense and chewy brownies; the trick is to add one less egg than what the directions on the box say, and instead replace it with an additional 1/3 cup of oil. Mix everything together and set that aside.
2. To make the mochi, mix the rice flour, sugar, water, and red food coloring in a microwave-safe bowl until well combined. Cover with plastic wrap and microwave for 3 minutes. Make sure to use glutinous rice flour, not regular rice flour. You can find this at almost any Asian grocery store or on Amazon.
3. Let the mochi cool for ~5 min. Then uncover the plastic wrap and mix the dough with a large spoon until it becomes smooth, this should take ~ 5 minutes.
4. Pour half of the brownie batter into a grease and lined baking tray, then spread on the mochi. The dough will be pretty sticky so just be patient.
5. Pour the other half of the brownie batter over the mochi dough, then bake according to the directions on the box.
6. Let the brownies cool completely before cutting, or else it will be too sticky and fall apart. Enjoy!
