Strawberry cinnamon rolls (small batch)
Ooey gooey cinnamon rolls with a sweet strawberry filling.
We’re just three days away from love day, and if you love your valentine, then you need to make them these gooey strawberry cinnamon rolls. I don’t make the rules :)
This is an updated small-batch recipe for my strawberry cinnamon rolls. The recipe makes two large cinnamon rolls or four medium ones, so it’ll be perfect for a cozy post dinner treat.


INGREDIENTS
makes ~2 large rolls or 4 small/medium ones
Dough:
1/3 cup warm milk
1 tsp active dry yeast
2 tbsp sugar
2 tbsp oil
1 egg
1.5 cups all-purpose flour
Filling:
2 tbsp butter, softened
1/4 cup brown sugar
1 teaspoon cinnamon
1/2 cup diced fresh strawberries
Frosting:
3 tbsp cream cheese, softened
2 tbsp powdered sugar
2 tsp milk
pink food coloring (optional)
DIRECTIONS
1. First prepare the dough by combining the milk, egg, yeast, sugar, and oil into a bowl. The milk should be just barely warm to the touch, but not hot. If the milk is too hot, it will kill the yeast.
2. Add the flour and mix until a dough forms. Knead on a lightly floured surface until smooth, about 8-10 minutes.
3. Place the dough in a lightly oiled bowl, then cover and let it rest in a warm spot for about 2 hours, or until doubled in size.
4. Once the dough has risen, roll it out into a small rectangle.
5. Spread softened butter over the dough, then sprinkle on the cinnamon and sugar evenly. Then add the diced strawberries on top.


6. Roll the dough tightly into a log and slice it into 4 equal pieces. (You can also just split it in half if you want to make two large rolls).
7. Place the rolls into a small baking tray, then cover and let it rise for another 30 min. You can also split the rolls up into two small baking dishes.
8. Bake at 350F for 25-30 min or until golden.
9. While the rolls are baking, make the cream cheese frosting by mixing softened cream cheese and powdered sugar until smooth. Add one tsp of milk at a time until it reaches the consistency you like. Optionally, you can add a drop of pink food coloring to the frosting as I did in the photos.
10. Once the rolls finish baking, spread on the frosting and enjoy these warm gooey cinnamon rolls!
