INGREDIENTS
Crepes:
2 eggs
3/4 cup flour
3/4 cup milk
1 tbsp oil
2 tsp sugar
Filling:
1 cup heavy cream
2 tbsp sugar
sliced strawberries
DIRECTIONS
1. To make the crepes, first combine the eggs and flour in a large bowl, whisk until combined. The batter will be thick.
2. Add the milk, oil, and sugar and whisk again until everything is mixed. I’ve found that mixing the ingredients together in this order (first thick then thin) helps prevent clumps from forming in the batter.
3. To make the crepes, heat a pan over medium heat and lightly butter the pan. Once the pan is warm, add in a ladle of the batter and swirl it around so that the batter spreads around the entire pan. Cook on one side for 1-2 min or just until it’s set, then gently flip it over and cook for another 30 seconds. Take the crepe out of the pan and set that aside to cool.
4. Make the rest of the crepes using the remaining amount of batter, make sure to lightly butter the pan between crepes.
5. While the crepes are cooling, make the filling by whisking together heavy cream and sugar until stiff peaks.
6. Once it’s time to assemble, lay two - three crepes in a row, overlapping them slightly. Then add the whipped cream and strawberries into the center. Tuck the sides into the middle and then roll it up like a burrito. My TikTok and Instagram videos show a detailed version of how to assemble these.
7. Chill in the fridge until you’re ready to serve and enjoy!
